Avocado Strawberry Spinach Salad with Poppy Seed Dressing
Salad Ingredients (local, fresh, organic, & non-GMO):
6 cups fresh baby spinach
1 pint strawberries, hulled and sliced
1 avocado, diced (or you can double this to 2 avocados!)
4 ounces crumbled gorgonzola, blue cheese or cheese substitute
1/4 cup sliced almonds, toasted
half a small red onion, thinly sliced
poppyseed dressing (recipe below)
Poppyseed Dressing Ingredients:
1/2 cup avocado oil (or any oil, such as olive oil)
3 Tablespoons apple cider vinegar
2 Tbsp. honey or agave nectar
1 Tbsp. poppy seeds
pinch of ground dry mustard (optional)
salt and pepper
Mix salad in large bowl. Mix dressing and serve.

Spinach Avocado Grilled Cheese…
2 slices whole grain bread
2-3 tablespoons Pesto
2 slices mozzarella or cheese substitute
handful fresh baby spinach
¼ avocado, sliced
2 tablespoons goat cheese, crumbled or cheese substitute
Spread about 1 tablespoon Pesto onto each slice of bread (2 tablespoons total.
On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with second slice of bread. Press together gently.
Heat 1 tablespoon olive oil in a frying pan over medium low heat. Add the sandwich to the oil and cook until bread is golden brown. Press down on the sandwich lightly, then flip the sandwich over and cook until second side is golden brown. Cut in half and Enjoy
Is there anything than smashed avocado on toast?!
